Dried in the shade and then they are put in a giant wok where they are gradually slowly rolled around while being fried and till the leaves become little pearls of green tea. This process gives them a toasty flavor that is slightly nutty. Scented with jasmine they have a sweet smooth flavor with a hint of flower and earthiness.
